Pasta Bolognese

Ingredients:

  • Ground beef - 1 kg
  • Tomato juice - 400 gr
  • Tomato paste - 2 tablespoon
  • Spaghetti/penne - 400 gr
  • Onion - 2 pcs
  • Carrots - 3 pcs
  • Garlic - 4 pcs
  • Celery stalk - 1 pc
  • Meat or vegetable stock - 500 gr
  • Oregano - 1/2 teaspoon
  • Basil 1/2 teaspoon
  • Salt - to taste
  • Black/red pepper - to taste
  • Rosemary - 4 sprigs
  • Parmesan - 100 gr
  • White dry wine - 150 ml 

 

Preparation:

 

First, use a heavy-bottomed pan or pot. Pour in the oil, add the rosemary, then the onion and carrot, and a few minutes of finely chopped garlic. Once the vegetables are well-simmered, the next step is the minced beef. Let it simmer for a few minutes. The meat will release its juices, then add the tomato juice or pasta. For any broth, it is important to use broth, not water. It gives the sauce a completely different flavor.

 

Add the wine, spices, and celery to the sauce. Cover the pot/pan and simmer over very low heat for 1 hour. The Bolognese sauce is ready.

 

Boil the pasta in salted water, transfer the amount of Bolognese sauce to a separate pan, equal to the number of people you want to serve. Add the cooked pasta and a little of the pasta broth. Mix well, let it sit on the stove for a few minutes, then transfer to plates and grate the Parmesan.
